Cream Cheese Caramel Brownies

Adapted from Hershey's White Chip Brownies

  • 4 eggs
  • 1 1/4 cups sugar
  • 1/2 cup butter, melted, plus 1/2 teaspoon for melting caramel
  • 2 teaspoons vanilla extract
  • 1 1/3 cups all-purpose flour
  • 2/3 cup cocoa
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups chocolate chips
  • 2 1/2 cups caramel candies, unwrapped
  • 350 g (12 oz) regular cream cheese
  • 1/2 cup condensed milk plus 1 tablespoon for caramel

  1. Heat oven to 180° C (360° F) and grease a 13x9x12 inch baking pan
  2. In a large bowl, beat eggs in high speed for 2-3 minutes, or until foamy; add sugar gradually. Add melted butter and vanilla extract and blend
  3. Over a medium sized bowl, combine flour, cocoa, baking powder and salt. Add to egg mixture, gradually, beating until well combined. Stir in chocolate chips 
  4. Pour half the batter over baking pan and set aside
  5. Add 1/2 teaspoon butter to a medium sized cooking pan, heat over medium-high heat and add 2 1/2 cup caramels and 1 tablespoon condensed milk. Stir constantly, until completely melted
  6. Drizzle caramel over first layer of batter and let it set for about 20 minutes; pour the rest of the batter on top of the caramel and cook for 30-33 minutes or until a toothpick comes out clean. Let cool completely
  7. Mix cream cheese and condensed milk, carefully so you don't over beat it or it will become runny; spread a thick layer over cooled brownies. Cut into squares and enjoy!
