Did you know that beans are an excellent source of protein and fiber? they are also a low fat food and they help remove toxins from our body because of the potassium they contain. Research has shown that they can help prevent and treat chronic diseases such as heart diseases, osteoporosis, obesity, diabetes, cancer, strokes and depression.
- 500 g beans (pinto or black beans work well)
- 1/4 onion
- salt to taste
- Clean beans with water and let them soak for the night. Pour water way above beans because they will absorb it overnight; nothing will happen if you add more than needed (you can toss it later), and this will keep you from adding more if a lot was absorbed.
- Add or remove water so you have 3-4 fingers above beans. Add onion and salt and boil on medium heat for 2 hours, covered.
- When beans are soft, turn heat off and liquify. If beans are too thick, add water until reaching desired consistency.
TIP: You can double the recipe and freeze in small zip lock bags, then use when needed!
