Caramel Pretzel Brownies

Adapted from Hershey's White Chip Brownies

  • 4 eggs
  • 1 1/4 cups sugar
  • 1/2 cup butter, melted, plus 1/2 teaspoon for melting caramel
  • 2 teaspoons vanilla extract
  • 1 1/3 cups all-purpose flour
  • 2/3 cup cocoa
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 2 cups caramel candies, unwrapped
  • 2 teaspoons cream
  • 1 cup crushed pretzels, plus around 30 complete pretzels for garnish
  • 50 g dark chocolate, melted

  1. Heat oven to 180° C (360° F) and grease a 13x9x12 inch baking pan
  2. In a large bowl, beat eggs in high speed for 2-3 minutes, or until foamy; add sugar gradually. Add melted butter and vanilla extract and blend
  3. Over a medium sized bowl, combine flour, cocoa, baking powder and salt. Add to egg mixture, gradually, beating until well combined. Stir in chocolate chips 
  4. Pour half the batter over baking pan and set aside
  5. Add 1/2 teaspoon butter to a medium sized cooking pan, heat over medium-high heat and add caramels and cream. Stir constantly, until completely melted
  6. Drizzle caramel over first layer of batter

7. Distribute crushed pretzels evenly over caramel

8. Place the rest of the batter on top of the pretzels and caramel. Probably some pretzel pieces will stick to batter and pop out, just sink them into the batter until completely covered. Place pretzels for garnish on top and cook for 30-33 minutes or until a toothpick comes out clean. Let cool completely

9. Melt the chocolate in the microwave, in 15 second increments until you can whisk it together; when chocolate is cool to touch, drizzle over cooled brownies, cut into squares and enjoy!

  2. Caramel and chocolate...yes please! And you could replace the pretzels with cashews and make them like turtle brownies!
