The easiest low cal Broccoli & Zucchini Soup

This is a vegan, low calorie, low fat, easy and delicious soup. You can double the recipe and freeze in zip lock bags to enjoy later!

Ingredients:
Yield: 4 Servings

  • 4 small zucchinis, washed and cut in big chunks
  • 250 g broccoli, washed and cut in big chunks
  • 1/4 onion, washed and cut in big chunks
  • Salt

  1. Add 5 cups of water over a medium-big pot and bring to a boil
  2. Add zucchinis, broccoli, onion and salt, and boil in medium-high heat for 10 minutes or until vegetables are tender
  3. Liquify and simmer for 10 more minutes. Add more salt if needed
