Grilled Eggplant, Avocado & Bell Pepper Sandwich

Ingredients:
Yield: 6 small Sandwiches


  • 6 small buns of your choice
  • 4 teaspoons Mustard
  • 4 tablespoons Mayonnaise
  • 2 Avocados, thinly sliced
  • 1 red bell pepper, washed and thinly sliced
  • 1 big eggplant, washed and thinly sliced
  • 1/2 cup fresh basil
  • dry oregano
  • Salt

  1. Drizzle eggplant slices with olive oil and add salt and oregano
  2. Grill slices over a slightly oiled skillet, until slightly browned on both sides. Set aside
  3. Over the same skillet you used for the eggplant, grill buns on both sides. Add mustard, mayo, Avocado, bell pepper, grilled eggplant and top with basil leaves. Enjoy!
