Avocado & Coriander Pasta

Yield: 3-4 Servings

  • 250 g whole wheat penne pasta
  • 1 ripe avocado
  • 1/4 cup coriander, chopped
  • 2 tablespoons olive oil
  • Juice of 1/2 lemon
  • 1/4 teaspoon powdered garlic (1 clove garlic)
  • Salt and pepper

  1. Cook pasta as directed in bag, drain and set aside
  2. While pasta is cooking, mash avocado with coriander, olive oil, lemon, garlic, salt and pepper, until well combined
  3. Add avocado mixture to pasta while still warm and mix carefully. Add extra salt if needed
