White Vanilla Cupcakes with Nutella filling

I baked these cupcakes for a Baby Shower; they're absolutely delicious and easy to make! you can change the color of the flower to pink for a girl.

Ingredients:
Yield: 24 Cupcakes

White Cupcakes:
  • 2 1/2 cups all purpose flour
  • 1 teaspoon salt 
  • 2 1/2 teaspoons baking powder
  • 3/4 cup unsalted butter, softened
  • 1 1/3 cups sugar plus 1/3 more for egg whites
  • 1 1/2 teaspoons vanilla 
  • 1 cup milk, at room temperature
  • 6 egg whites, at room temperature
  1. Pre-heat oven to 180º C (350º F). Line muffin tins with paper liners and set aside
  2. In a medium sized bowl mix flour, salt and baking powder
  3. Cream over a big  bowl in low speed butter and 1 1/3 sugar, until light and fluffy, about 1-2 minutes. Add vanilla and mix
  4. Add dry ingredients to wet ingredients, alternating with milk and  mixing in medium speed in between each addition
  5. In a separate bowl, whip the egg whites in high speed until foamy, for about 2 minutes; then start adding the sugar gradually, and keep beating until soft peaks form, about 2 more minutes. Fold them gently into batter mixture 
  6. Fill cupcake papers 3/4 cup with batter
  7. Bake for 23 minutes or until a tooth-pick inserted in the middle comes out clean

Vanilla Buttercream:
  • 1 cup unsalted butter at room temperature
  • 3 cups of powdered sugar, sifted
  • 1/4 teaspoon table salt
  • 1 tablespoon vanilla extract
  • 1 tablespoons milk
  • Blue food coloring
  1. Beat butter for 2 minutes in medium speed. Add powdered sugar and mix until incorporated with butter. Add salt, vanilla extract and milk and beat in medium speed for 3 minutes

To assemble:
  • Cupcakes
  • Buttercream
  • Blue food coloring
  • 1 cup nutella
  1. Insert a paring knife into a cooled cupcake at an angle, about 1 cm from the outer side of the cupcake; continue cutting in a circular way, all around the cupcake, until closing the circle, you should have a cone form center in the end. Remove the cone and slice it's pointed end leaving the top of the cupcake intact. With a pastry bag or a normal bag with the corner cut off, fill the cupcake center with Nutella; then place the flat circle on top of the cupcake, covering the hole
  2. With a Wilton large closed star 2D tip, pipe the buttercream into the cupcakes (your frosting will be barely enough, so try not to waste)
  3. take 3/4 of remaining frosting and add the food coloring until getting the desired color. With a small Wilton 107 tip, pipe the flowers on top of the piped white buttercream
  4. Pipe a small dot in the middle of the flowers with the remaining white buttercream with a small Wilton 1 tip
*make sure to place your cupcakes in a fresh place so the buttercream stays nice and firm

  4. Nutella is so yummy...I can just imagine that yummy goodness inside of a cupcake. Yep, I've GOT to try these cupcakes!!! They look awesome!
