Venezuelan Arepas

I've made these twice already... they are amazing!!! definitely a recipe to try!
I ate them the first time with a very good Venezuelan friend and loved them so much that I had to ask for the recipe and try them at home; they were easy to make and really filling, this could be a one course dinner and they would be enough. Hope you enjoy them as much as I did!

Ingredients:
Yield: 12 arepas

Filling:
  • 400 g chicken breasts
  • 3 ripe avocados
  • 1 small onion, chopped
  • salt and pepper
  1. Pour 5 cups of water in a big bowl and bring to a boil; cook chicken for about 10 minutes or until the center is not pink. Remove chicken from water (do not throw water) and with two forks, shred the chicken
  2. Remove 2 cups of the water you used to cook the chicken and set aside (you will need them for the arepas); leave 1/2 cup of water in the bowl and throw away the rest. Place shredded chicken and chopped onions in the bowl with water and cook in medium-high heat until water is evaporated; leave one minute longer, stirring constantly
  3. Over a big bowl, smash the avocadoes with a fork; add shredded chicken, onion and season with salt an pepper; mix well and set aside

Arepas:
  • 4 cups of corn flour (P.A.N. is the typical brand they use in Venezuela)
  • 2 cups chicken boiled water
  • 2 cups milk
  • Salt
  1. Pre-heat oven to 200° C (390° F)
  2. Mix with your hands the corn flour, water, milk and salt
  3. Divide dough in 12 equal pieces and roll each piece into a 4 in (10 cm) diameter and 1/2 in (1 cm) thick. Place the arepas in a pan in high heat and cook until they detach from the pan, then flip and cook until the same happens in the other side (a crust should be formed)
  4. Cook the arepas in the over for 10 more minutes

To assemble:
  • Avocado and Chicken mix
  • Arepas
  • 70 g Gouda cheese, shredded
  1. Grab the arepas with a clean cloth and carefully cut them in half
  2. Fill them with avocado and chicken mix and top them with cheese
