Peach Quesadillas with Honey Sour Cream

Yield: 4 servings

  • 500 g chicken, cubed
  • 8 flour tortillas
  • 3 peaches, thinly sliced
  • 50 g manchego cheese, shredded
  • 1 tablespoon dry parsley
  • Salt, pepper and garlic powder
  • 200 g sour cream
  • 1 teaspoon honey

  1. Pre-heat over in 150° C (300° F)
  2. Season chicken with parsley, garlic powder, salt and pepper. Cook in medium-high heat over a lightly oiled big skillet in batches and set aside
  3. Divide cheese, chicken and peaches into tortillas and heat in the oven until cheese is melted, about 3-4 minutes
  4. In the meantime, mix sour cream and honey. Serve with peach quesadillas
