Chicken Salad Sandwich

Yield: 3-4 Servings

With this recipe you can make 3 sandwiches with 3 breads each, or 4 sandwiches of 2 breads each

  • 8-9 bread slices
  • 500 g chicken breasts
  • 3 scallops, chopped
  • juice of 1 lemon
  • 1/2 cup Greek yogurt
  • 2 tablespoons mayo
  • 1 teaspoon mustard
  • Salt, pepper and garlic powder

  1. Over a big bowl, mix scallops and lemon juice; set aside
  2. Boil chicken breasts in medium-high heat until completely done (center shouldn't be pink). Cut chicken into cubes
  3. Add chicken, yogurt, mayo and mustard to scallops. Season with salt, pepper and a pinch of garlic powder and mix well
  4. Place the mix over breads and serve


  1. Chicken salad is one of my favorite foods. What a great idea to use Greek yogurt rather than mayo.
