Chicken & Mushroom Quesadillas

Yield: 4 Servings

  • 8 flour tortillas
  • 600 g chicken, cubed
  • 4 scallions, chopped
  • 300 g mushrooms, sliced
  • Pinch of Garlic powder
  • 100 g Gouda cheese, shredded

  1. Pre-heat oven to 200° C (390° F)
  2. Season cubed chicken with salt and pepper. Over a lightly oiled skillet, cook chicken in batches until completely done; set aside
  3. In another lightly oiled skillet, cook scallions for 2 minutes; add mushrooms and chicken and cook in low heat for 2 more minutes. Add garlic powder, salt and pepper and mix
  4. Divide chicken mixture over tortillas and top with cheese. Cover with a second tortilla and cook in the oven until cheese is melted, about 2 minutes
