- 8 flour tortillas
- 600 g chicken, cubed
- 4 scallions, chopped
- 300 g mushrooms, sliced
- Pinch of Garlic powder
- 100 g Gouda cheese, shredded
- Pre-heat oven to 200° C (390° F)
- Season cubed chicken with salt and pepper. Over a lightly oiled skillet, cook chicken in batches until completely done; set aside
- In another lightly oiled skillet, cook scallions for 2 minutes; add mushrooms and chicken and cook in low heat for 2 more minutes. Add garlic powder, salt and pepper and mix
- Divide chicken mixture over tortillas and top with cheese. Cover with a second tortilla and cook in the oven until cheese is melted, about 2 minutes
