Cottage Cucumbers

Ingredients:
Yield: 4 Servings

  • 2 cucumbers, cleaned
  • 150 g cottage cheese
  • 1 teaspoon dry basil
  • salt

  1. Trim off the ends of your cucumbers and cut them in half, so you have 4 big pieces of cucumber. Slice them lengthwise and using a spoon, scoop out the flesh
  2. Mix cottage cheese, basil and season with salt. With a spoon, fill hollowed cucumbers with cheese mixture and serve
