Crust:
- Pre-heat oven to 160° C (325° F). Place a baking sheet over a 9 x 9 in baking pan
- Mix crackers and sugar. Add melted butter and blend together with your fingers
- Press into pan and bake for 10 minutes. Set aside (leave oven on)
Cheesecake:
- 460 g (16 oz) Cream Cheese, softened
- 1/2 cup sugar
- 1/2 teaspoon vanilla
- 2 eggs
- Beat cream cheese, sugar and vanilla until blended. Add eggs and beat until combined
- Pour into crust and bake for 40 minutes. Refrigerate for 3 hours
To assemble:
- 12 Strawberries
- 50 g toffee, crushed
- 200 g semi sweet chocolate, melted
- Dip a thin, sharp knife in hot water before each cut. Cut into 8 even squares
- Place a strawberry in the middle of each bar with pointed side up
- Pour chocolate on top and sprinkle with toffee
