Chocolate & Toffee Cheesecake Bars

Ingredients:
Yield: 8 Cheesecake Bars


Crust:

  • 1/3 cup butter, melted
  • 300 g graham crackers, crushed
  • 1/4 cup sugar

  1. Pre-heat oven to 160° C (325° F). Place a baking sheet over a 9 x 9 in baking pan
  2. Mix crackers and sugar. Add melted butter and blend together with your fingers
  3. Press into pan and bake for 10 minutes. Set aside (leave oven on)

Cheesecake:

  • 460 g (16 oz) Cream Cheese, softened
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla
  • 2 eggs

  1. Beat cream cheese, sugar and vanilla until blended. Add eggs and beat until combined
  2. Pour into crust and bake for 40 minutes. Refrigerate for 3 hours

To assemble:

  • 12 Strawberries
  • 50 g toffee, crushed
  • 200 g semi sweet chocolate, melted

  1. Dip a thin, sharp knife in hot water before each cut. Cut into 8 even squares
  2. Place a strawberry in the middle of each bar with pointed side up
  3. Pour chocolate on top and sprinkle with toffee
