Healthy Chicken Pita

Did you know that greek yogurt has more protein and less carbohydrates than normal yogurt? Try buying a low fat version and enjoy a better healthier choice!

Yield: 4 servings

  • 300 g chicken, cooked and cubed
  • 2 tomatoes, seedless and cubed
  • 1/4 cup fresh parsley, chopped
  • 150 g greek yogurt
  • Juice of 1 lemon
  • salt and pepper
  • 4 Pita breads
  • 4 lettuce laves
  1. In a big bowl, mix chicken, tomato, parsley, yogurt and lemon juice. Season with salt and pepper
  2. Cut pitas only 1/3 open, carefully so you don't perforate your bread with the knife
  3. Add one lettuce leaf to each pita and fill with chicken mixture. Serve immediately
