Funfetti Cupcakes

For this recipe I used my favorite Vanilla Buttercream and the combination was perfect. If you have your own favorite frosting you can use it and follow the same process for assembling the cupcakes. Enjoy!

Yield: 24 cupcakes

Funfetti Cupcakes:
  • 2 1/2 cups all purpose flour
  • 1 teaspoon salt 
  • 2 1/2 teaspoons baking powder
  • 3/4 cup unsalted butter, softened
  • 1 1/3 cups sugar plus 1/3 more for egg whites
  • 1 1/2 teaspoons vanilla 
  • 1 cup milk, at room temperature
  • 6 egg whites, at room temperature
  • 1/3 cup waxed multi-colored jimmies

  1. Pre-heat oven to 180º C (350º F). Line muffin tins with paper liners and set aside
  2. In a medium sized bowl mix flour, salt and baking powder
  3. Cream over a big  bowl in low speed butter and 1 1/3 sugar, until light and fluffy, about 1-2 minutes. Add vanilla and mix
  4. Add dry ingredients to wet ingredients, alternating with milk and  mixing in medium speed in between each addition
  5. In a separate bowl, whip the egg whites in high speed until foamy, for about 1 minute; then start adding the sugar gradually, and keep beating until soft peaks form, about 2 more minutes. Fold them gently into batter mixture 
  6. Fold in jimmies carefully and fill cupcake papers 3/4 cup with batter
  7. Bake for 23 minutes or until a tooth-pick inserted in the middle comes out clean

To assemble:

  • 100 g white chocolate, melted and cooled
  • 24 maltesters or any other circular-form chocolate or candy
  • 1/2 cup multi-colored sugar pearls

  1. With a Wilton large closed star 2D tip, pipe the buttercream into the cooled cupcakes
  2. With a fork, soak the maltesters in the cooled white chocolate and then roll them over the colored sugar pearls, until completely covered. Place covered candy on top of cupcakes
