Ferrero Rocher Cupcakes with Nutella & Hazelnut filling

If you are a chocolate lover, these are the perfect cupcakes for you... a real chocolate bomb!!! Chocolate cupcake with nutella and hazelnut filling, Nutella frosting, chocolate topping and chopped hazelnuts. Enjoy!

Yield: 12 cupcakes

Chocolate Cupcakes:
  • 1 cup sugar
  • 2/3 cup + 1 tablespoon all-purpose flour
  • 1/3 cup + 1 tablespoon cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/3 cup boiling water

  1. Heat oven to 180° C (350° F).  Line muffin tins with paper liners and set aside
  2. Combine in a big recipient sugar, flour, cocoa, baking soda, baking powder and salt, mixing well. Add the eggs, milk, oil and vanilla, beating in medium speed for 2 minutes. Add water and stir. The batter will be really thin, so don't worry!!! Pour batter into baking pans.
  3. Bake for 27 minutes, or until a toothpick inserted in the middle comes out clean. Let cool completely before frosting

Nutella Frosting:

  • 1/2 cup butter, softened
  • 1 cup Nutella
  • 2-3 cups powdered sugar, sifted
  • 2-3 tablespoons milk
  1. Cream butter and nutella in medium speed until well combined. Add sugar and mix. Add milk as needed

Chocolate topping:

  • 100 g semi-sweet chocolate, melted and cooled
  • 1 tablespoon powdered sugar, sifted
  1. Combine melted chocolate and sugar. Let cool completely before using
To assemble:

  • 1/2 cup Nutella
  • 14 hazelnuts
  • Chocolate topping
  • 100 g. chopped hazelnuts

  1. Insert a paring knife into a cooled cupcake at an angle, about 1 cm from the outer side of the cupcake; continue cutting in a circular way, all around the cupcake, until closing the circle, you should have a cone form center in the end. Remove the cone and slice it's pointed end leaving the top of the cupcake intact. With a pastry bag or a normal bag with the corner cut off, fill the cupcake center with Nutella and 1 hazelnut; then place the flat circle on top of the cupcake, covering the hole
  2. Pipe the Nutella frosting into the cupcakes and add on top the cooled Chocolate topping. Sprinkle with chopped hazelnuts and make sure to put them on a fresh place
