Chicken, Parmesan & Pesto Sandwich

Yield: 4 Sandwiches

  • 4 ciabata breads, halved
  • 4 teaspoons pesto (you can also use bought pesto)
  • 4 teaspoons mustard
  • 100 g Parmesan cheese, shredded
  • 40 g dry tomatoes, in chunks
  • 350 g chicken, in strips
  • 1 tablespoon dry oregano
  • Salt and pepper

  1. Season chicken with salt, pepper and oregano. Over a lightly oiled medium sized skillet, cook chicken until done. Set aside
  2. Spread pesto and mustard, one on each half of ciabata; Add cheese and tomato and grill until cheese melts or until bread is lightly brown
  3. Add chicken to sandwiches and serve
