Ingredients:

- 4 ciabata breads, halved
- 4 teaspoons pesto (you can also use bought pesto)
- 4 teaspoons mustard
- 100 g Parmesan cheese, shredded
- 40 g dry tomatoes, in chunks
- 350 g chicken, in strips
- 1 tablespoon dry oregano
- Salt and pepper
- Season chicken with salt, pepper and oregano. Over a lightly oiled medium sized skillet, cook chicken until done. Set aside
- Spread pesto and mustard, one on each half of ciabata; Add cheese and tomato and grill until cheese melts or until bread is lightly brown
- Add chicken to sandwiches and serve

That looks really good. Wish I could have one of these sandwiches for my dinner tonight!
