Mushroom & Zucchini Side Dish

Ingredients:
Yield: 4 servings

  • 1/2 onion, chopped
  • 1 zucchini, cubed
  • 1 tomato, chopped
  • 250 g mushrooms, sliced
  • 1 teaspoon dry oregano
  • salt and pepper

  1. Pre-heat a big sized lightly oiled skillet in medium heat. Add onions and cook for around 2 minutes, or until onions get lightly yellow. Add zucchini and cook for 4-5 minutes. Add tomato and mushrooms and season with oregano, salt and pepper. Cook for another 2 minutes and serve immediately
