Low Fat Low Sugar Apple Muffins

This muffins were absolutely delicious, very moist and fluffy, even though they're low fat and low sugar. This is definitely a recipe to do again!

Ingredients:
Yield: 12 muffins

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 1/4 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter
  • 1 egg
  • 1 cup unsweetened apple sauce
  • 1 1/2 cups peeled and shredded golden apples (about 2 apples)

  1. Pre-heat oven to 160° C (325° F) and oil muffin tins
  2. In a big bowl, combine flours, sugar, cinnamon, nutmeg, baking soda and salt. Mix until well combined
  3. In a medium sized bowl, combine the butter, egg, apple sauce and shredded apple and mix well
  4. Add wet ingredients to dry ingredients and mix just until well combined
  5. Fill muffin tins until 3/4 with batter. Bake for 25 minutes or until a toothpick comes out clean. Let cool for 10 minutes before removing from tins and enjoy!
