This muffins were absolutely delicious, very moist and fluffy, even though they're low fat and low sugar. This is definitely a recipe to do again!

- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 1/4 teaspoons baking soda
- 1/2 teaspoon salt
- 2 tablespoons melted butter
- 1 egg
- 1 cup unsweetened apple sauce
- 1 1/2 cups peeled and shredded golden apples (about 2 apples)
- Pre-heat oven to 160° C (325° F) and oil muffin tins
- In a big bowl, combine flours, sugar, cinnamon, nutmeg, baking soda and salt. Mix until well combined
- In a medium sized bowl, combine the butter, egg, apple sauce and shredded apple and mix well
- Add wet ingredients to dry ingredients and mix just until well combined
- Fill muffin tins until 3/4 with batter. Bake for 25 minutes or until a toothpick comes out clean. Let cool for 10 minutes before removing from tins and enjoy!

These look great! I can almost smell them! Will try to make them tomorrow as I need to try to go low sugar and low fat!
