Chicken and Bacon Salad with Coriander & Avocado Vinaigrette

Chicken and Bacon Salad:
Yield: 4 servings

  • 300 g lettuce, clean
  • 400 g breast chicken, cubed
  • 6 long strips bacon
  • 150 g shredded white cheese
  • 1 1/2 avocado, sliced
  • 1/2 teaspoon thyme

  1. Over a medium sized skillet cook in high heat the bacon strips, until crunchy; Cut them in very small pieces and set them aside to cool. Season chicken with salt, pepper and thyme and cook over the same skillet on medium-low heat, until well done
  2. Place lettuce in a big bowl, and add the chicken, cheese, avocado and top with bacon crunchy pieces

Coriander & Avocado Vinaigrette

  • 1/8 cup vinaigrette
  • 1/4 cup olive oil
  • 1/2 cup fresh Coriander
  • 1/2 ripe avocado
  • Juice of 1 lemon

  1. Liquefy all ingredients together and serve with salad
