Chicken and Bacon Salad:

- 300 g lettuce, clean
- 400 g breast chicken, cubed
- 6 long strips bacon
- 150 g shredded white cheese
- 1 1/2 avocado, sliced
- 1/2 teaspoon thyme
- Over a medium sized skillet cook in high heat the bacon strips, until crunchy; Cut them in very small pieces and set them aside to cool. Season chicken with salt, pepper and thyme and cook over the same skillet on medium-low heat, until well done
- Place lettuce in a big bowl, and add the chicken, cheese, avocado and top with bacon crunchy pieces
Coriander & Avocado Vinaigrette
- 1/8 cup vinaigrette
- 1/4 cup olive oil
- 1/2 cup fresh Coriander
- 1/2 ripe avocado
- Juice of 1 lemon
- Liquefy all ingredients together and serve with salad

I love chicken in salad. Adding the bacon is an inspired idea!
