Red Bell Pepper stuffed with Tuna Salad

Ingredients:
Yield: 4 servings

  • 4 cans tuna, drained
  • 1 small tomato, chopped
  • 2 cups clean lettuce, chopped
  • Juice of 2 lemons
  • 1 teaspoon mustard
  • 4 tablespoons mayonnaise
  • 4 red bell Peppers

  1. Mix the tuna, tomato, lettuce, lemon juice, mustard and mayo and season with salt and pepper
  2. Cut the red Peppers in half and remove seeds; you can choose to cut them vertically in the middle, or cutting off the top. Fill the peppers with the tuna salad and serve
