Fig & Goat Cheese Salad

Ingredients:
Yield: 3-4 Servings

Fig & Goat Cheese Salad:

    • 150 g baby spinach
    • 200 g dry fig, in big chunks
    • 3/4 cup candied almonds
    • 100 g goat cheese, in big chunks

    1. Mix all the ingredients and set aside

    Soy & Lemon Vinaigrette:

    • 3 tablespoons olive oil
    • 1 1/2 teaspoon soy sauce
    • juice of 1 lemon
    • 1 teaspoon mustard
    • 2 teaspoons vinegar

    1. Mix all the ingredients until well combined. Serve with salad
