Easter Nest Cupcakes

Yield: 16 Cupcakes

  • 2 eggs
  • 1/2 cup oil
  • 2 teaspoons vanilla extract
  • 3/4 cup buttermilk
  • 1 cup sugar
  • 1 1/2 all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt

  1. Pre-heat oven in 170° C (340° F). Line cupcake pans with cupcake liners and set aside
  2. Beat eggs, oil, vanilla and buttermilk. Add sugar, flour, baking powder, baking soda and salt, mix on low speed, just until blended. Do not over beat
  3. Fill cupcake papers 3/4 cup with batter. Bake for 20-25 minutes or until a toothpick comes out clean. Let cool completely before frosting

To Assemble:

  1. Frost cupcakes with Chocolate Fudge Frosting.
  2. Place your chocolate bar with the smooth side up; run a potato peeler through the chocolate until enough curls form. Place curls over frosting, on the edges of cupcake in a circular form, leaving the center free for the chocolate eggs
  3. Place 3 chocolate eggs on the center of your cupcake


  1. The nest on top is so clever and adorable! I keep seeing all these amazing Easter recipes online but am trying my hardest not to make them all, I'd seriously gain about 20 lbs!
