Ingredients:

- 2 eggs
- 1/2 cup oil
- 2 teaspoons vanilla extract
- 3/4 cup buttermilk
- 1 cup sugar
- 1 1/2 all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- Pre-heat oven in 170° C (340° F). Line cupcake pans with cupcake liners and set aside
- Beat eggs, oil, vanilla and buttermilk. Add sugar, flour, baking powder, baking soda and salt, mix on low speed, just until blended. Do not over beat
- Fill cupcake papers 3/4 cup with batter. Bake for 20-25 minutes or until a toothpick comes out clean. Let cool completely before frosting
To Assemble:
- Chocolate Fudge Frosting
- 48 chocolate Easter eggs
- 50 g chocolate (you will need a block of chocolate for the curls)
- Frost cupcakes with Chocolate Fudge Frosting.
- Place your chocolate bar with the smooth side up; run a potato peeler through the chocolate until enough curls form. Place curls over frosting, on the edges of cupcake in a circular form, leaving the center free for the chocolate eggs
- Place 3 chocolate eggs on the center of your cupcake

The nest on top is so clever and adorable! I keep seeing all these amazing Easter recipes online but am trying my hardest not to make them all, I'd seriously gain about 20 lbs!
