Chocolate-Chip Buttermilk Pancake Cupcakes


These were absolutely perfect!!! moist and fluffy, these were easy to make and they saved me all the time in front of the stove... though the normal pancakes also have their charm! you can try this mix however you prefer, in cupcake form or the old style pancake form. Enjoy!

Ingredients:
Yield: 10 Cupcakes

  • 1 1/2 cup all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1 1/4 cup buttermilk
  • 1 egg
  • 3 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • whipped cream

  1. Pre-heat oven to 170° C (340° F). Butter cupcake tins generously
  2. In a big bowl, mix together flour, baking powder, salt and sugar. Add buttermilk, egg, butter and vanilla and mix just until combined. Do not over beat. Fold in chocolate chips
  3. Fill tins with mixture to 3/4 and bake for 20-25 minutes. Remove them from cupcake tins, add whipped cream and maple syrup and enjoy!

  2. That sounds delicious and it is perfect because unlike pancakes, it leaves room on your plate for more food!

  3. I agree with Sweet Posy - great idea! Do you think it would work with a non fat milk or does it need the cream in buttermilk?

    1. Yes, I think it could work out, but the texture the buttermilk gives is much better than the texture from milk
