Light Tuna Tostadas

This is a very light, easy, fresh and healthy meal; you can serve with a hearty warm soup and you´ll have a complete lunch or dinner!

Ingredients:
Yield: 6 Tostadas

  • 3 cans of tuna, in water
  • 6 lettuce leaves, chopped
  • 1 tomato, chopped
  • 2 tablespoons light mayo
  • 10 canned jalapeño slices
  • 1/2 teaspoon mustard
  • 1 tablespoon vinegar liquid from jalapeños
  • juice of 1 lemon
  • 6 tostadas*

  1. Mix tuna, lettuce, tomato, mayo, jalapeño, mustard, vinegar and lemon. Place mix over
    tostadas and serve immediately

*You can buy the tostadas, or if you want to make them light like I did, you can heat 6 corn tortillas in the microwave for around 2 minutes or until they are toasted and crisp
