Lentils Soup

Did you know that lentils are very low in Saturated Fat, Cholesterol and Sodium? They are also a good source of Protein, Iron, Phosphorus and Copper, and a very good source of Dietary Fiber, Folate and Manganese. Here is a very easy recipe and as you can see, very nutritious!

Ingredients:
Yield: 8 Servings

  • 500 g lentils
  • 9 cups water
  • 4 strips bacon, chopped
  • 1/2 onion, chopped
  • 1 big tomato, chopped
  • 2 tablespoons fresh coriander, chopped

  1. Over a big skillet, boil over medium-high heat the lentils with 5 cups of water for 25-30 minutes, or until tender
  2. Cook bacon over a big sized lightly oiled skillet, in medium-high heat, until lightly brown, around 2 minutes; add onion and cook for 2 more minutes or until lightly yellow. Add tomato and coriander and cook for 2 more minutes, stirring constantly
  3. Add lentils (do not drain) to the tomato and onion mix, plus 4 cups of water and salt to taste. Cook for 15 more minutes and serve
