Ice Cream Cupcakes

I made only 12 cupcakes because I don't have any more space on my fridge, but this recipe can be easily doubled. This is a simple and delicious dessert, you just have to add the ingredients together and freeze!

Ingredients:
Yield: 12 Servings

  • 500 ml Ice Cream, softened
  • 12 Oreos
  • Fruit of your choice
  • Decoration (cookies, chocolate, sprinkles, etc)

  1. Add 1 oreo to each cupcake tin and fill the rest with ice cream. Run a spoon through hot water and smooth the top of the cupcake. Freeze for 4 hours or more
  2. To remove the ice cream cupcakes from their tins, warm a knife with hot water and run it on the edges of the ice cream cupcake; remove cupcakes from cupcake tins and place them on a plate. Freeze again for 15 minutes.
  3. Add fruit and decorations of your choice, place on platter and place on freezer until ready to eat
