Ice Cream Cupcakes

I made only 12 cupcakes because I don't have any more space on my fridge, but this recipe can be easily doubled. This is a simple and delicious dessert, you just have to add the ingredients together and freeze!

Yield: 12 Servings

  • 500 ml Ice Cream, softened
  • 12 Oreos
  • Fruit of your choice
  • Decoration (cookies, chocolate, sprinkles, etc)

  1. Add 1 oreo to each cupcake tin and fill the rest with ice cream. Run a spoon through hot water and smooth the top of the cupcake. Freeze for 4 hours or more
  2. To remove the ice cream cupcakes from their tins, warm a knife with hot water and run it on the edges of the ice cream cupcake; remove cupcakes from cupcake tins and place them on a plate. Freeze again for 15 minutes.
  3. Add fruit and decorations of your choice, place on platter and place on freezer until ready to eat

  1. Looks yummy! We have also tried something like this before, and it's REALLY GOOD! Love the fruit on top. Just the right touch! =)
Thanks for another great post, Maria.

  2. Gonna make this for dessert tonight! :)
