Double Vanilla Flower Cake

This is a super easy and delicious cake, it took around 15 minutes to make the bread (without oven time)! The frosting is the same I made in my Christmas Trees Chocolate Cake, which is always a big success. Because I didn't have much time I used strawberry jam for the filling, but you can make your favorite filling with any flavor you prefer... enjoy!

Cake:

  • 2 1/2 cups all-purpose flour, sifted
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup butter, softened
  • 1 1/2 cups granulated sugar
  • 2 tablespoons vanilla extract
  • 4 eggs
  • 3/4 cup milk

  1. Pre-heat oven to 350º F (180º C). Grease and flour two 8 inch baking pans
  2. Mix butter, sugar and vanilla on medium-high speed for 2 minutes, or until light and fluffy. Beat in eggs, one at a time. Alternate flour mixture and milk, staring and ending with flour. Pour mixture over pans
  3. Bake for 35 minutes or until a toothpick comes out clean


To assemble the cake:

  1. Pipe a "barrier" of frosting all around the outer side of the bottom cake layer, so the filling won´t spill; Add jam or filling in the inside of the piped frosting and top it with the second layer
  2. Add a very thin layer of frosting first, so when you add the real layer crumbs won´t come out; add the second layer with the remaining frosting and make the top part waves with a spoon and the side lines with a butter knife or frosting knife
  3. Top with your favorite flowers and enjoy!
