Spanish Tortilla

This is a recipe from my Spanish dear friend Patricia, with a little of Parmesan cheese and lots of vegetables, this vegetarian dish is amazing... you'll need a good Teflon pan to prevent the tortilla from adhering and making the process easier.

Yield: 2-3 servings

  • 1 red pepper, chopped
  • 1 medium leek, chopped
  • 300 g frozen spinach
  • 4 eggs
  • 1/4 teaspoon nutmeg
  • 70 g Parmesan cheese, shredded

  1. In a medium sized skillet, cook in low heat the spinach, until softened, for about 4 minutes.
  2. Cook in another lightly oiled skillet, in medium heat the red pepper and leek, until tender, about 4 minutes. Season with salt and pepper. Add spinach and cook in low heat until all liquids are gone.
  3. Beat eggs with a fork in a small bowl, add cheese, nutmeg and salt. Add egg mix to vegetables and mix well
  4. Pour mix over a lightly oiled, (good Teflon) medium sized skillet and cook in low heat, for about 9 minutes. Slightly separate the edges of the tortilla from the pan so it won't stick. Take a plate that covers the pan and flip the pan on top of the plate so the tortilla changes from skillet to plate, the cooked part on top; gently slide the tortilla from plate over the skillet again so that the side that's not cooked yet sits on the bottom. Cook for 3-4 minutes on the other side.

  7. I made the tortilla tonight for dinner. Mine did not turn out as pretty as I had trouble with the flipping part. But tasted great. A bit hit with my husband and daughter! Thanks!!!

  9. I watched the video link. I had tried the first method, but my tortilla was kind of stuck in the middle and it wouldn't fall out. It didn't matter because it was yummy even if it wasn't beautiful.
