Yield: 2 servings
- 2 extra large potatoes
- 2 small eggs
- 30 g shredded cheese
- 2 slices bacon
- foil
- Preheat oven to 350° F (175° C)
- Boil potatoes until done. Cut the "head" of the potato and with a spoon -very carefully- take the insides of the potato out, leaving the skin of the potato not too thin. Place the potatoes over foil so they can stand by themselves
- In a small container, crack an egg very carefully. Add cheese on the bottom of the potato, then, very cautiously so the egg yolk won't break, add the egg on top. Season with salt and pepper
- Bake for 10-15 minutes. In the meantime cook bacon. When eggs are done, add bacon and enjoy
