Chicken, Feta & Cranberry Salad

Yield: 2 servings

  • 2 chicken breasts, cubed
  • dry garlic
  • 1/2 an iceberg lettuce, clean
  • 100 g dry cranberries
  • 200 g feta cheese, cubed
  • 100 g sunflower seeds

  1. Season chicken with salt, pepper and dry garlic. Cook over a slightly oiled skillet in medium heat, both sides until done, about 3 minutes one side and 2 minutes the other
  2. Mix lettuce, cranberries, feta cheese, sunflower seeds and chicken

Orange Sweet Vinaigrette

  • 1 teaspoon honey
  • 1/4 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 teaspoon mustard
  • 2 teaspoons juice from an orange
  1. Mix together the Vinaigrette ingredients and serve with salad
