Lemon Butter Cookies

Yield: 4 dozen cookies

  • 3/4 cup unsalted butter
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 1/2 all purpose flour
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 1/2 cupconfectioner's sugar
  • 1-2 teaspoons water
  1. Preheat oven in 200° C (400° F)
  2. Cream together the butter and sugar, until fluffy. Add vanilla, egg and lemon juice and mix until combined. Add the flour gradually and mix between each addition. Fold in the lemon zest and mix until evenly combined into batter
  3. Over a baking sheet, add 1 tablespoon cookie batter ball, with 1.5 inch separation between each. Bake for 8-9 minutes and let cool completely before adding the confectioner's sugar mix
  4. Combine confectioner's sugar and 1 teaspoon water, (add the second teaspoon if needed) pipe over cookies (I used a plastic bag and made a small hole in one of the corners of the bag)
