This Chocolate Cake single serving dessert can be made on a ramekin or directly in a cup. If you want to make a mini cake like I did, let it cool down completely before pulling it out; I used some Chocolate Sour Cream for frosting.
2 tablespoons flour
2 tablespoons sugar
2 teaspoons unsweetened cocoa powder
1/4 teaspoon baking powder
1/8 teaspoon instant coffee
Pinch of salt
2 tablespoons milk
1 tablespoon butter, softened
Drop of vanilla extract
Grease ramekin or cup. Combine softened butter (not melted) and sugar and mix until light and fluffy
Mix in milk and vanilla. Add flour, cocoa, baking powder, instant coffee and salt and mix until well combined.
Microwave for 1 minute; add 10 more seconds, and keep checking it, until done
