Green rice


Ingredients:
Yield: 6 serves

  • 2 cups rice
  • 1/2 cup onion, chopped
  • 2 teaspoons dry parsley
  • 4 tablespoons cream cheese
  • 1 1/2 cup frozen spinach
  • 1/2 cup cream
  • 2 cups gouda cheese, shredded
  • Salt and pepper

  1. Preheat oven to 200° C (400° F)
  2. Cook rice as directed, adding salt, and set in an ovenproof pan
  3. Heat a slightly oiled skillet in medium heat. Cook onion until slightly yellow. Add spinach, parsley, cream cheese, cream, salt and pepper. Cook for 2 minutes
  4. Liquefy mix (Add water if mix is too dry) and add over rice mixing carefully. Add cheese on top and cook in the oven for 10 minutes, closed.

  2. That looks really good. Might be a nice dish around Christmas. The gouda is an interesting choice of cheese. I'll have to try it!
